I did not think you would have so much – Don’t forget us yet

 

I took advantage of a nice late afternoon to harvest a load of beets. It is time now. As fast as we get to it, we will be harvesting the main winter supply of roots vegetables. The forecast is that it will be November sometime next week and I like to mostly finish the harvest by the end of the first full week in November as after that it can get cold.

“I did not think you would have so much yet”. I hear this again and again as people step into the display cooler. It is still full of so many things. We pay attention to the details and keep planting long into the summer. In a sense the group of us here are professionals at our business.With Gods blessing this is a time of bounty as the results of this planting come to fruition. Don’t forget us yet.  We still have a lot of produce to sell. Winter is coming. I think that it would be a good idea to make sure that you have a stash of this good food- when winter storms come you can relax rather than joining the rush to the store.  We are open with summer hours till the day before Thanksgiving.

Today we made thin slices of onions and peppers for a pilot project that is exploring getting local food into the schools. I put over 350 lbs of peeled onions and 500 lbs of sweet pepper halves through the slicer at the kitchen at the Cornell learning farm in Canton. A good portion of them will be served fresh at various schools and we froze some of them.  Does it make you eyes water to just think of being in a room with that many freshly cut onions? Daniel
