Roma tomatoes in the freezer

 

We still have Napa cabbage. One of my favorite ways to prepare Napa or Chinese cabbage (different names same crop) is to slice it thin by placing head on cutting board  cross cutting from the top down. Then I put a white salad dressing on just as you would for Cole slaw. A good variation is to add a bit of shredded carrot or celeriac to the mix.

We plan to have to farm stand open tomorrow from 2 pm-6 pm and Saturday from 10 am-4 pm (Dec 7-8) In the produce cooler there is lots of kale and a bit of arugula from the greenhouse,  winter squash, and all sorts of root crops along with apples. In the bulk food room is various dry foods such as spices, flour, sugar, etc. In the freezer we have frozen sweet corn, green beans, rhubarb, chicken, pork, beef, blackberries, strawberries and more.  I even have several hundred lbs of roma tomatoes in the freezer at summer prices so if you need more sauce there is a chance yet. We are planning to make spaghetti sauce sometime soon. When I was a bachelor I used to freeze tomatoes whole and if you dip the frozen tomato in warm water for a bit the skin slips right off. They are nice in cooking. I also have peeled garlic available again. Daniel
